His Career

David worked in various Restaurants in Glasgow L'Academie" in Great Western Road; Stravaigan in Gibson St; The Artful Dodger in Byres Rd;The Warehouse; The Brell Restaurant in Ashton Lane; The Puppet Theatre ; The Cul de Sac; The Townhouse Hotel; The Forte Crest Hotel; The Hilton Hotel and the Cabin in Dumbarton Road. It was while working in the latter that he was diagnosed with Hodgekins Disease. He lost his job there which led him to applying for a job in Raymond Blanc's Hotel in Oxfordshire. He succeeded and moved south. While there he went to Ramsay's flagship restaurant on a day off to show off his skills. Ramsay hired him. When David came up to Glasgow on his days off he would head for One Devonshire Gardens to work with Andrew Fairlie in his kitchen. In April 2001 David took up post as Head Chef at Ramsay's Glasgow restaurant Amaryllis in One Devonshire Gardens. January 2002 this restaurant gained its first Michelin Star. February 2003 Ramsay ordered his return to London. David wasn't happy about this and in April that year he told me he was coming back to Glasgow to open his own restaurant in the city centre. A restaurant that would have nothing to do with Ramsay or his empire. Two weeks later David's body was found in an outside basement of a block of flats in Chelsea London. The circumstances surrounding his death remain a mystery to this day
